Pumpkin Soup: This Thanksgiving Day
recipe is a mouthwatering idea and a surefire way to
please any guest’s palate!
What you’ll need:
1 sweet onion
2 cloves garlic chopped
1- 15 oz. can chopped tomatoes
1-15oz can black beans
1-30 oz pumpkin
3 or 4 cans vegetable stock
2/3 cup Heavy cream
1 tsp cumin
11/2 tsp curry
1 tsp cayenne pepper
First, sauté the onions and garlic in olive
oil until soft. Add tomatoes, black beans and then stir
until warm.
Next, add vegetable stock, pumpkin and spices. Cook
until bubbly, add cream. Stir and taste until you get
a desired flavor … and then enjoy!

What you’ll need:
2 lbs string beans
2 large sweet onions - sliced
1/4 cup olive oil
1 large can seasoned chopped tomatoes
1- 10-1/2 oz. can tomato sauce
1 tsp. cinnamon
Salt and pepper to taste
Begin by stringing the beans and cutting them in half
lengthwise Sauté the onions in olive oil until
tender. Then, add the tomatoes and spices and cook for
about half an hour. Add the string beans and cook for
an additional hour or until beans are done.
Fresh Cranberries: No cans needed for
this Thanksgiving Day Recipe must-have!
What you’ll need:
1 cup sugar
1 cup water
4 cups (1 12-oz package) fresh or frozen cranberries
Optional ingredients: Pecans, orange peel, raisins,
blueberries, cinnamon, nutmeg, allspice.
First, wash and pick over cranberries. In a saucepan,
bring to a boil the water and sugar, stirring to dissolve
sugar. Add cranberries and then return to a boil. Reduce
heat, simmer for 10 minutes or until cranberries burst.
At this point you can add a number of the optional
ingredients if you desire. Try mixing in a half a cup
of roughly chopped pecans with or without a few strips
of orange peel. You can add up to a pint of fresh or
frozen blueberries for added sweetness. Spices such
as cinnamon, nutmeg or allspice may be added too. Remove
from heat. Cool completely at room temperature and then
chill in refrigerator. Cranberry sauce will thicken
as it cools. Cranberry sauce base makes 2 1/4 cups.
Olive Oil basted Turkey: A new twist
on the traditional Thanksgiving Day recipe!
What you’ll need:
Extra virgin olive oil
Rosemary
3 Oranges (or more if you have a larger Turkey)
3 Lemons (or more if you have a larger Turkey)
Sea salt
A turkey, naturally!
Clean and prepare your turkey per usual and put into
a baking pan. Slice the fruit, then squeeze the juice
from the lemons and oranges under the skin of the turkey
along with a generous coat of olive oil. Chop up your
rosemary and add that under the skin along with sprinkles
of sea salt as well. Repeat the same process over the
Turkey skin. Place the fruits inside the turkey with
or without stuffing. Cook turkey for whatever length
is recommended per pound.
Pumpkin Crunch Cake: Create the perfect

What you’ll need:
1 Yellow Cake Mix
1/2c Melted butter
4 eggs
1 30 oz can of Pumpkin
1c Sugar and 1/2c brown sugar
2/3can evaporated milk
1-1/2 tsp. cinnamon
1/2c chopped pecans
First, remove 1 cup of the cake mix and set aside.
In a small bowl, beat one egg and add the remaining
cake mix and butter. Press into greased 9/13 pan. In
another bowl, beat the remaining 3 eggs. Stir in the
pumpkin, 1/2c sugar, 1/2 brown sugar, milk & cinnamon.
Pour over the cake mix. Then take the 1 c reserved cake
mix, add remaining 1/2c sugar, pecans and butter. Mix
this until crumbly and then sprinkle over the pumpkin
mixture as your topping. Bake at 350 for 50-60 minutes.
