This time of year always has me feeling patriotic. I was trying to think of something fun I could make with the kids that would help us celebrate the 4th. When I looked through my refrigerator, I noticed some pre-made pie crust that would be expiring soon. I was in no mood to make a pie, so I turned to faithful pinterest and typed in “pie crust.” Most of the images that came up were actually for pies - go figure - but one on Stick to Your Hips was for pie crust cookies. Hmmmm…
You will need:
- Pie crust (refrigerated or you can make your own)
- Sugar
- Cinnamon
That’s it! Oh, and this only takes 10 minutes to bake! Okay, I am getting ahead of myself.
Roll out the pre-made pie crust.
Use some festive cookie cutters to cut shapes out of the dough. We used a star and number 4 cookie cutter.
We rolled together the left over dough, pressed it down, and used our cookie cutters to make more cookies. Because this dough was thicker, we got thicker cookies with many layers. My kids preferred the thinner, crispier cookies, but I liked the thicker ones. Try making both kinds and see what you prefer.
Place on an ungreased cookie sheet and sprinkle cinnamon sugar over the top.
We like lots of cinnamon sugar. This would also be fun with some red and blue sugar to keep with the 4th of July theme.
I had the kids pour some cinnamon sugar with a spoon and spread it around with their fingers. Hubby says the oven kills all sorts of germs!
Ready to go in the oven.
Bake at 350 degrees for 10 minutes or until the cookies turn golden. Let them cool completely, and celebrate the 4th with some flaky goodness!
They aren’t as pretty as my inspiration, but the kids don’t know that!
