| Spaghetti & Meatballs |
I usually don’t make meatballs, but my boys have been really enjoying turkey, so I figured this would be a good way to get them to eat something besides the noodles.
I will be making meatballs from now on because they were delicious and a big hit. I stored them separately and ate a few for lunch yesterday with a side salad. I might do the same thing today or give them to the boys for lunch. We’ll see who wins.
Ingredients:
1 pound of ground turkey (although you could use whatever ground meat you prefer)
1/2 cup of rolled oats
1/4 teaspoon dried basil
1 teaspoon dried oregano
1 small onion, finely chopped
1 teaspoon minced garlic
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon canola or olive oil for coating the pan
Preheat oven to 400 degrees. Put oil of choice into bottom of pan. I used my cast iron skillet and placed it into the over to let it heat up a little - five minutes is enough.
Combine ingredients thoroughly. I used an ice cream scoop for scooping so I would have even sized meatballs.
Scoop meatballs and roll into balls.
Place in pan with a little space between them.
Bake for 45 minutes. I turned them after 20 minutes then every 10 minutes thereafter.

You can pair with whole wheat spaghetti and your favorite tomato based Italian sauce or make you own like I do. They were scrumptious alone, as well so you could have them with some sauteed vegetables or a nice salad as well. Enjoy!
