Oh man, late night cravings are the worst, aren’t they? No, I’m not pregnant (at least I don’t think I am). But my husband has it worse than I do. On a limited budget he will still stop at HEB to get a pack of cookies or donuts to eat late at night. It’s so annoying. I on the other hand would love to but have pretty good self-control and will get some crunchy carrots to munch on or something a bit more healthier. But sometimes I do want to finish the whole tub of ice cream, who doesn’t. Thankfully dinner time is pretty low in calories (even though I hate that word, CALORIES) and pretty darn healthy. I wanted to share our dinner we had last night with ya’ll.
I saw a friend post on Instagram a monochromatic dinner plate and thought, what the heck is that?! I tend to try to stray from that, it reminds me of my sister (who is anti-vegetarian). Anywho, she had made parmesan fish…. cheese and fish?? Does anyone else quiver at that combination?? Eeek! But the next afternoon while prepping for dinner I saw we had some fish (that doesn’t take long to defrost, I thought to myself). So there I go to pinterest to search! I found several recipes that I liked but that isn’t enough for me, I need to love it and get excited, so… I made my own.
I preheated the oven to 450 and sat the fish in a bowl of cool water (I used the individually packed fish). I was going to make couscous and some buttered Brussels Sprouts, so I like to time it just right + five minutes so dinner is nice n hot when I serve it. So, I started with rinsing the couscous (yes, you need to rinse it). Then cutting the veggies and prepping the foil. Once the fish was ready, I placed it on the foil, topped it with the parm/mayo mix, veggies, sprayed some EVOO and salt and pepper on top. Baked on a cookie sheet for 22 minutes and BAM! It was done. Check it out? What do you think? Added a spoon of couscous and the brussel sprouts on the side. Needless to say, we all loved it. I did not think that the parmesan was going to work, but it totally did.

4-5 fish fillets (I used tilapia)
1 cup mayo
1/2 cup parmesean
1-2 tsp paprika
1/2 tsp chili powder
1/2 red bell pepper, sliced
1 cup frozen peas (leftovers)
1 cup shredded carrots (that’s what I had in my fridge)
1 zucchini sliced
salt and pepper to season
Also needed 5 foil sheets and a cookie sheet as well as a side dish like pasta or you can use couscous and brussel sprouts like I did.
Directions: Preheat oven to 450
1. Defrost the fish fillets and begin the prepping the veggies.
2. Mix the mayo, Parmesan cheese, paprika and chili powder in a small bowl.
3. Place the fish in the center of the foil and spread the mixture on top.
4. Place veggies on top of the fish, spray with EVOO and sprinkle with salt and pepper.
5. Crimp the foil together creating a steam pouch for the fish to steam.
6. Place the fish on a cookie sheet and bake for 20-25 minutes at 450!
Next time… I would put some red pepper flakes instead of chili powder, but everything else was great. I loved the sweetness from the carrots and fish was nice and flaky. Yumm! Follow me on pinterest, I have made several of the recipes on there and try my best to add notes to which I love/hate!
