Mexican lasagna sounds interesting but how do you make it? Do you layer lasagna with refried beans and enchilada sauce? Well you could make it that way but we think you’ll like our way better. Here’s the recipe.
1 pound lean ground beef
1 (1 oz) package of taco seasoning
2 (16 oz) cans refried beans
2 (10 oz ) cans of enchilada sauce
2 green onions, chopped (optional)
1/4 cup chopped fresh cilantro (optional)
10 (6 inch) corn or flour tortillas
2 cups of shredded cheddar cheese
Preheat oven to 350 degrees. Cook ground beef in large skillet. Stir in taco seasoning. Add water following package directions.
Spray a 9x13 pan with cooking spray and line the bottom of the pan with a layer of tortilla shells. Spoon ground beef, refried beans, enchilada sauce, and cheese over the top of the tortilla shells. Sprinkle layer with chopped onions and fresh cilantro. Add another layer of tortilla shells and repeat.
Cover the top layer with cheese and bake in the oven for around 20 to 30 minutes or until cheese is melted. Sprinkle some fresh cilantro and green onions on top before serving.
