Another essential on our Christmas (and general summer) menu - my mum's famous macaroni salad. Come September people are already saying to her "I hope you're making your macaroni salad", "you should make a double helping of the macaroni salad this year!", and the like... It's gorgeous!
Macaroni Salad Ingredients:
2 cups macaroni elbows (uncooked)
1cups grated carrot
1 16oz can whole kernal corn (drained)
1 cup grated cheese
1 16oz can crushed pineapple (drained)
Beat 2 eggs, add 1 teaspoon salt, 1 teaspoon mustard, 3/4 cup sugar, 2 tablespoon flour. Bring slowly to the boil and add 1/2 cup milk, 1/2 cup vinegar and cook until thick. Leave to cool.
Cook macaroni elbows in boiling water. When cooked drain and cool. When cooled, add in carrot, corn, cheese and pineapple.
When dressing is cooled, pour it over salad ingredients and mix it all together.
