Lemon-Dill Fingerling Potatoes

1lb fingerling potatoes, scrubbed and cut lengthwise in half
1/3 cup fresh dill, chopped
2TB fresh lemon juice
4tsp olive oil
1/2tsp salt
freshly ground pepper to taste

1-Preheat the over to 400 deg F. Line a large baking sheet with foil.
2-Combine potatoes, dill, lemon juice, and oil in a bowl, spread in a single layer on foil. Roast 20
mins; turn the potatoes. Roast the potatoes until tender and golden brown 15-20 mins. Sprinkle
with salt and pepper.

Four servings. 2 pts for WW or Core

Tip: Prep all in a zip lock back the night before and refrigerate, then prep as directed.
