Quick and easy recipes?
 
Can you guys help me out with some dinner ideas please? I'm finding that I just can't and probably shouldn't be doing big and elaborate cook from scratch meals every night now, and am wracking my brains for dinner ideas that are quick, easy and that someone that can't really cook can do (aka DH).

I have a crock pot and use it frequently in the winter, but it's not like I have a ton of recipes to use. When I look online there are just SO many recipes to chose from that it gets overwhelming and I can't decide, etc.

So just looking for some ideas to add to our rotation. :)

... no one likes it at my house because they don't like things "mixed" or covered with cheese. pfft :angry:

Pasta bake

Make your favorite type of tubular-type pasta (penne, rigatoni, or even shells would work etc) and then place in a baking dish.

Stuff to throw into the pasta and mix in:
Cooked ground meat: turkey, beef or squirrel J/K :rolf:
Marinara sauce (your own, or store bought)

Top with
mozzarella cheese and Parmesan and bake until melted and golden

Variations
Now, I've done a mexican version of this.
Ground meat(use taco spices)
I throw in a can beans, corn and crushed tomato's
Top with that Tex Mex Cheese

Primavera version
-frozen veggies (whatever suits your taste)
-cream of chicken soup
-cooked ground meat
There is always Shepard's pie too that's quick and you can make them in advance and then freeze them

I have a pasta dish that is very similar, very yum, plus it freezes so well. We have a ton of potatoes to use right now too, so Sheppards pie is on the list as well.

I just made a bruchetta chicken bake the other night that was easy & super yummy.

Bruchetta Chicken Bake:

Preheat oven to 400

In a 9 x 13 baking dish, spread out 1 lb. of uncooked chicken, cubed
sprinkle with basil
top with 1 1/2 cups Mozzarella cheese

In a bowl combine:
1 box of stuffing mix (like stove top - the 6.5 oz box)
1/2 cup water
1 can diced tomatoes (14 - 15 oz can)

spread the stuffing mix over the chicken.

Bake for 30 mins.

Cant get no easier then this.....Soup!

Throw a box of chicken broth in a large pot and simmer!
Add some Cheese or Meat Tortellini and cook!
When Tortellini are close to being done, throw in some fresh spinach (of course make sure to wash spinach first)

Whala...DONE ... EAT and enjoy :)

This actually came from dh. He was working at his brothers dinner at one point and the cheif was making it and told him how easy it was!



Another one...hot dogs in a Croissant

Take a Croissant and unroll it (Pillsbury kind of course not the precooked ones)
Add a hot dog to it ...some cheese if you like and roll!
Put Croissants in oven and cook according to the Croissants directions!

*my half sister makes them smaller so they are like pigs in a blanket. She cuts the hotdog up into small pieces and then rolls pieces of the croissant around the small dogs.

As for Crockpots...I really gave up on that! I felt like EVERYTHING I was cooking tasted the same :rolleyes:

Mmmm....that soup sounds really good, and we eat a lot of soup this time of year. I can see that being really good with some fresh bread. bread is easy to make when you have a Kitchen Aid mixer. :p

The hot dogs are easy too, plus Ayla would love those. Though I totally want a Michigan dog now.

Stacey, got any good spaghetti sauce, errr gravy recipes?

Going to check out the Kraft site now.

These are all our really easy- semi-home-made recipes that I use major short cuts on, note I love cooking an detailed elaborate cooking so this is by far not our full menu..hehe

Dorito Casserole

1 lb ground beef - brown with chopped onion
Drain
Add 1 packet of taco season
1 can Rotel- drained
1 cup sour cream

Mix together, line a 9x13 baking dish

Crunch and sprinkle 7 ounces of Doritos

Top with at least 1 cup cheddar cheese and 1 cup mozzarella

Bake in oven until cheese is done, make sure not to cook too long or the Doritos will burn.

Spaghetti Bake

1 32 ounce jar of pepper & mushroom Ragu
16 oz Rotini pasta - cooked
2 lbs ground beef browned with 2 onions
1/2 tsp salt 1/2 tsp pepper
8 oz sour cream
8 oz cream cheese
16 oz small curd cottage cheese
2 cups cheddar cheese
2 cups mozzarella cheese

Brown the meat/onions, add spaghetti sauce.

Cook the noodles & drain, add sour cream, cream cheese, cottage cheese, and salt and pepper.

Line a large pan (larger than 9x13) with noodles, then put the meat mixture, then top with cheese bake at 350 for 30 minutes.

This recipe is HUGE you might want to 1/2 it or freeze half or save for a family gathering...or you might get left overs for 2-3 nights in a row.

Pizza Potatoes

4 tbs butter
1 bag of frozen hashbrown potatoes (or you can cube 1 lb of fresh)
1 onion
2-3 cups water
1/2 tsp salt and 1/2 tsp pepper

Fry in large pan the potatoes, chopped onions, butter, water, salt & pepper until potatoes are soft.

Mash in pan and add layered in this order:

1 8oz can tomato sauce (we use the Huntz with garlic and basil), spread out like pizza sauce, 8 oz mozzarella cheese, and layer with pepperoni on top, then another 8oz can of tomato sauce, 8oz cheddar cheese, and another layer of pepperoni. Put lid on and simmer until cheese is melted.


Shepards Pie

1 lb ground beef browned with a chopped onion- drain, add to mixing bowl
Add:
1 can tomato soup
1 can of drained kitchen cut green beans
1 tsp McCormick Peppered Season All

In the mean time you can make 1/2 lb mashed potatoes, use 1 envelope of Betty Crocker, or use the already made Country Crock potatoes- I rotate and actually use all of these.

Line medium baking dish with meat mixture, top with potatoes, top cheddar cheese and bake in oven until cheese is melted.

Sausage Chowder

1 lb ground sausage brown with 1 chopped onion

In a soup pot add:
1 chopped bell pepper
1 drained can of kidney beans
2 cans of tomato juice
2 cups of water
1 bay leaf 1 tsp salt
1/8 tsp pepper
1/2 bag of frozen hashbrown potatoes or you can dice your own potatoes use about 1/2 lb

Veggie Soup

2 lbs ground beef ground with 2 onions

in large soup pot or crock pot add:

1 bag of hashbrown potatoes or 1 lb of diced potatoes
2 cans of drained kitchen cut green beans (the tiny cut ones)
6 drained jars of Gerber Graduate Carrots (lazy and super easy I know)
4 12oz cans of tomato juice
1 can of beef broth
1 envelope of Lipton Beefy Mushroom packet/season
12 ounces of V8 juice
1/4 cup of worcestershire sauce
10 cups water
4 tsp salt
3/4 tsp pepper
2 bay leaves

I'll add more in a bit...

Beef Stew

1 lb ground beef (or you can use beef tips), ground with 1 onion
1 cup diced celery
1/2 bag of frozen hashbrown potatoes (or 1/2 lbs of fresh potatoes)
6 jars of drained Gerber Graduate carrots
4 cans of Campbells Beefy mushroom soup
1 cup water
3 tbs worcestershire sauce
1 envelope of Lipton Savory Herb & Garlic soup mix
1/2 tsp salt or less
1/2 tsp garlic salt
1/2 tsp pepper

Zuppa Toscana- the sausage soup from the Olive Garden

1 lb ground Italian sausage (I don't like Italian sausage so I use Jimmy Dean), brown the sausage with an onion

In soup pot/crock pot add:

1 1/2 tsp crushed red peppers (or less if you don't like it pretty spicy)
4 tbs real bacon pieces
4 cloves fresh minced garlic
8 cups water
5 chicken boullion cubes
1 lbs russet potatoes or 1 bag of frozen hashbrown potatoes

add meat/onions to pot when done after you drain

cook covered until potatoes are done and the very very last step is to add 1 cup of heavy whipping cream- if you add this before, the bottom will burn. DO this after you turn the heat off. Stir and serve.

Poppy Seed Chicken

3 cooked/shredded chicken breast (my mom uses drained Tysons canned chicken- 4 cans)
1 can cream of celery
1 can cream of chicken
1/2 tsp salt, 1/4 tsp pepper

mix all together and add to 9x13 pan

Topping:
3 rolls Ritz crackers crumpled mixed with 1 1/2 tsp poppy seeds and 3 sticks melted butter, mix all together and crumble on top

Put in oven on 350 until crackers are crispy

Best chicken pot pie ever ever ever

THIS MAKES 2 PIES

1 1/2 lbs chicken - cooked
2 blocks cream cheese - soften in microwave
12 oz chicken stock
2 packets of Good Season Italian Dressing (in the salad dressing isle)
2 12oz bags of Valley Fresh steamers- go ahead and cook per directions
2 cups sour cream
1/2 tsp salt, 1/2 tsp pepper

I mix everything above, put in 2 pie plates and use no bottom crust (we don't like it) and top with 2 Pulsbury top pie crust (in the roll out/cinnamon roll section)

Cook per the directions on the pie crust...you could add biscuits for a topping too or add a bottom layer of pie crust.

Here is a slightly different take on Anna's Dorito Casserole:

Line the bottom of a 9 x 13 with a tube of crescent roll dough (like Pillsbury)
Sprinkle 1/2 bag of crushed up doritos
Layer of meat mixture (1 lb. browned ground beef, 1 pkg taco seasoning (w/o water), 1 14-15 oz. can of tomato sauce))
Layer of Sour Cream
Layer the other 1/2 bag of crushed doritos
Layer of shredded cheese (cheddar or mexican cheese)
Bake 30 mins at 350 degrees.

Super easy quesadillas :

1 large can of chicken (I use the 13 oz size), drained
1 can Ro-tel - we like the Mexican style, UNdrained

Mix together over medium heat until the juice is gone.

1 pkg tortillas
shredded cheese

Either use Pam or a light coat of butter on a tortilla and put it down on a medium hot skillet. Cover one side with the chicken mixture and shredded cheese. Fold over and brown both sides. I also add fresh tomatoes, onions, or sauteed mushrooms if I feel like it.

you throw everything on a baking sheet, cook it and then finish it off in a pot

I am terrible for giving recipes because I don't cook with recipes most of the time. Some of our favorite crock pot dishes are......

Chili (ground beef, stewed tomatoes, chili beans, spices, etc put in crock pot) and jalapeno cornbread

Beef Stew (Beef, veggies, beef broth, spices, tapioca thickens it nicely)

Chicken Wild Rice (or Noodle) Soup

Veggie Beef Soup

Ham and Potato Soup

Cavatini (pasta, seasoned ground beef, marinara or spaghetti sauce, pepperoni, cheese and 1-2 cups water so you don't have to pre-cook noodles)

Enchiladas or Fajitas (chicken or beef with Rotel and other spices....serve with fajita fixings...yum!)

Pot Roast and Potatoes/Carrots

Salsa Soup (ground beef, salsa, beef broth, corn, black beans, and black olives--served with sour cream and tortillas)

Chicken Tortilla Soup

Raspberry Chipotle Pork Chops or Pulled Pork

Scalloped Potatoes and Ham

I don't cook much with prepared things-- but these dishes are super quick and delicious! I love my crock pot, especially for winter!

to be honest I don't even "cream" this. I did use 2% once. If you like it creamier add a little cream or milk to it, otherwise it's delicious by itself.

Parmesan Chicken:

in a bowl, mix seasoned bread crumbs & grated parm. cheese (I use a 1:1 ratio). Add salt & pepper to taste.

Melt some butter in a bowl.

Dip uncooked boneless skinless chicken breasts in butter and then coat with bread crumb mixture.

bake for 1 hour at 350 degrees (you might need to go longer if you are using ginormous chicken breasts).

(I cut my chicken up into smaller pieces first, because you get a higher breading to chicken ratio).

I serve with Lipton Parm. Angelhair noodles. Or you can serve it over spaghetti noodles with some marinara sauce.

STOVE TOP Easy Chicken Bake

What You Need
1 cup hot water
1 pkg. (120 g) Stove Top Lower Sodium Stuffing Mix for Chicken
1 lb. (450 g) boneless skinless chicken breasts, cut into bite-size pieces
1 can (10 fl oz/284 mL) condensed cream of chicken soup
1/3 cup sour cream
3 cups frozen mixed vegetables (carrots, corn, green beans, peas), thawed, drained
Make It

HEAT oven to 400F.

ADD hot water to stuffing mix; stir just until moistened.

COMBINE remaining ingredients in 13x9-inch baking dish; top with stuffing.

BAKE 30 min. or until casserole is heated through and chicken is done.

Here is my favorite crock pot recipe.

4 chicken breasts
1 pkg taco seasoning
1 jar salsa

Put chicken in crock pot. Mix taco seasoning and salsa together and pour over chicken. Cook all day. Shred chicken up with fork. Put in corn or flour tortillas with sour cream and cheese. Yumo!!!

We love this recipe. You can make it hot or mild with whichever salsa you choose.
