3-4 pounds chicken (I buy whole fryers and cut them up or keep it whole, it works either way.))
1 large onion sliced
1 tablespoon olive oil
2 teaspoons kosher salt
2 teaspoons paprika
1 teaspoon pepper
20 garlic cloves, peeled

Slice the onion and place in the bottom of a crock pot.
Mix olive oil, salt, pepper and paprika into a paste.
Rub it on the chicken. (If using cut up chicken you can toss it all together, along with the garlic cloves.)
Place chicken in the crock pot.
If you are keeping the chicken whole place the cloves all around the chicken, place some inside the chicken too.

Cook on low for 6-8 hours.

I like to use some of the cloves of garlic in my mashed potatoes after the chicken is done. Super yummy!
