I just made this
Cheesy Rice and Bean
s dish for the first time tonight and had to share it with you all! It was so easy and oh so good.
Of course, being that I can never follow a recipe exactly, I made a few changes! I used mild salsa in place of the tomatoes, and I omitted the onion to skip the cooking step. I just made the rice in my rice-maker (3/4 cup uncooked) and then mixed with the drained and rinsed beans. I also used pinto beans with white rice since that's what we had. I was very liberal with the cheese
! Baked for 20 minutes covered, then 15 uncovered at 350 degrees. I didn't add any cheese at the end though, just put it all on top in the beginning, lol.
This is definitely going to be a meal we make in the upcoming weeks to freeze ahead for when baby gets here! The best part is how good and filling it is, yet very cheap to make!
