I know several Doulas that routinely meet at coffee shops for interviews so it's not that unusual but hopefully she can meet at your home if that is more comfortable with you. If you are concerned with how quickly she will respond to questions, etc I would ask her what her typical turn around time is during the interview. I am good friends with several birth professionals (midwives, doulas, photographers) and they have a very demanding on call schedule. So, they take care of current clients first and then reply to inquiries/interview when they get a moment and it make take a few days to get an interview set up.
