My new favorite is colorful quinoa salad (stole from work)
I cook quinoa as directed using chicken stock instead of water. I cool this and add diced red onion, diced tomatoes (canned, undrained, the juice will keep the salad moist), diced zucchini, sliced kalamata olives, and feta. Drizzle with a little olive oil. Add slivered basil and parsley and toss. Super tasty and healthy, plus you can add pretty much anything.
