Protein Pancakes

1/2 Cup catmeal
1/2 Cup cottage cheese
3 egg whites
1 tsp vanilla extract

Pulse the oatmeal in a food processor or blender for a few seconds until it is the consistency of corn meal. Add the cottage cheese and egg whites and mix. You can also add protein poweder, cinnamon, sweetener, etc here. Cook in a preheated skillet like regular pancakes.
