Black Bean Roll Up

Whole Wheat Pita or Spinach wrap
Low sodium canned black beans (drained and rinsed)
Low fat feta cheese
Spring mix lettuce
Olives
Avocado
Tomatoes
Onion (optional)

I prefer pita pockets with this one. Warm up the pita pocket over the fire on the stove. You can either open the pocket or stuff all the ingredients in the center and fold like a taco. Warm up your beans and chop up all the other ingredients to the size of your liking. I don't chop up the spring mix lettuce at all. Put all your ingredients inside..sprinkle with feta and enjoy. I have also added brown rice inside and that was very tasty.
