Yes ma'am I sure did and its delicious! I used partly an online recipe and threw some of my own stuff in there.
This is what I did:
1/4 cup of bulgur wheat soaked in the following cocktail: 1/4 cup of lemon juice, 1/4 cup of olive oil, pinch of kosher salt, pinch of pepper, zest of 1 lemon. Whisk well to mix the ingredients. Cover and let it sit for approx 1.5-2 hours depending on how soft you want your bulgur.
Chop up a bunch of spring onions, handful of parsley, handful of cilantro and about 10 cherry tomatoes. I used my food processor (love that thing!!) and got a nice fine consistency. feel free to add more or less of what you want to. You can't go wrong! Mix it all up well and add to the bulgur which should have soaked up the liquid after the 1.5-2 hour point. Serve cold. Can add fun things like pine nuts, mandarin orange segments or whatever you want to.
Very healthy and absolutely delicious. I have some for my lunch today so will try and remember to take a pic before I eat it
