*These recipes are for 2 people with plenty of leftovers, but can easily be upped for a bigger family*

Night 1: Shredded Chicken Tacos
-Chicken breasts (1 per person)
-1/3 c. chopped onion (you can also use a small can of green chilis for the same result)
-1/2 packet of taco seasoning
-1/4 cup of oil
-1/2 cup of water
-Taco ingredients (shells or wraps, cheese, avocados, fresh tomatoes, whatever else you like)

Combine the items in a crockpot and cook for 8 hours on low. Shred chicken. It will absorb the water and oil. Fill tacos and top.

Night 2: Tortilla Soup
-Remainder of the shredded chicken from the night before that you left in the crockpot
-2 cans of chicken broth
-1/2 can of black beans
-1/2 can of corn
-1/2 jar of salsa
-1/2 packet of taco seasoning, to taste

Combine ingredients in the crockpot and cook for 8 hours on low. Stir and ladle into bowls. Top with tortilla chips, sour cream and cheese. You can also serve the soup over brown or white rice to make a really hearty meal.
