I'm not a vegetarian, but I can definitely relate. Connor was BF until he was 6 months old and I was dairy-free for half that time due to his milk protein intolerance. For the last 6 weeks or so I was on the elimination diet (recommended by Dr Sears). There were only like 5 things that I could eat - all day every day. I never did figure out what he couldn't tolerate.

Now that he's on solids, I know there are quite a few things on the list that he can eat with no problems. He does fine with broccoli, corn, apple, banana... just to name a few. Every baby is different. The best way to find out what your baby can tolerate would be eliminating the things on the list for a week or two, then slowly reintroduce them into your diet (one at a time). Or, if you typically eat a LOT of any one thing on the list, maybe try just eliminating that for two weeks and see if things get better.

I just wanted to say I know how hard it is. It sounds like you're doing a great job so far!
