What you could do is use that extra $3.99 EB in place of the $2.99. I'm sure you can find something else to use it on before it expires. Plus most stores will push through expired EB's anyway-- good info to have just in case. Do you buy milk from CVS? Mine has it on sale this week for $2.99. I don't know if it's the same where you are but that's an idea for it.

If you substituted it, you could knock down your OOP to $2.19. And even less if you're able to find a Zantac coupon. Check for one of those coupon machines in the aisle. Sometimes you can get lucky.

In the end, just do whichever you feel comfortable doing. I love to have as little OOP as possible so I'm a bit obsessive about it.
