1 1/4 cup of oatmeal (quaker oats- put in the food processor to grind them up)
1 cup of low fat cottage cheese
1 cup egg whites
1 tsp vanilla extract
Mix all ingredients in a large bowl until smooth, if you want to add fruit, do so now. Turn stove to medium heat and pour about 1/4 cup of batter into the pan. When pancake begins to get small bubbles flip it. Serve with syrup, fruit- whatever you want.
I know these sound weird, but they are SO good.
They are 4 points for 1/3 of the batter. I have not made them myself yet, I tried them in nutrition class- but when I do I will let you know how many panckaes you get.
