2 C BUTTER (no substitutions), softened
1 C confectioner's sugar
1 t vanilla
3 1/2 C all purpose flour
1 C chopped pecans
8 oz white candy coating
1/2-1/2 C crushed peppermint candy
In a large bowl, cream butter & sugar together. Stir in vanilla, gradually adding flour. Stir in pecans. Refrigerate 3-4hrs or until easy to handle.
Roll into 1" balls. Place 2 inches apart on ungreased baking sheets. Bake at 350* 18-20 mins or until lightly browned. Remove to wire racks to cool.
In a microwave safe bow, melt candy coating. Stir until smooth. Dip the top of each cookie into the candy coating, then into the crushed peppermint candies.
Yields 5 dozen cookies
