I thought this would be a good idea...I know that pregnancy and having kids puts some strain on us women when it comes to making sure we eat healthy. I was thinking we could help eachother out by Recipe Sharing. This can help "stir up" (no pun intended) fun meal ideas while incorporating a healthy regime in our new lifestyles! So share share share (in fact, share even if it's not healthy! We all need to cheat sometimes, right???)
Here's a yummy recipe I learned recently. It's part of the South Beach Diet thing, (I've NEVER dieted in my life, but someone made it for me and it was SOOOOO good! and extremely low in fat!!)
In a small desert dish (or do what i do and use small/medium sized wine glasses), add 3 tablespoons of Ricotta Cheese. Add one teaspoon of vanilla, one teaspoon of Splenda (or if you want you can use real sugar), and mix in either some blueberries, bananas, strawberries, raspberries...or a squirt of chocolate sauce!!!
This recipe is soooo darn delicious! It's very light, but the flavor will surprise you!
You can also change it up and add Almond Extract (with the fruit version) or Mint extract (for the chocolate version) rather than the vanilla. It's delicious!
Chicken Spaghetti Bake:
10 oz. spaghetti noodles
1 can Cream of Mushroom soup
1 bell pepper diced
1/2 onion diced
Shredded cheese (I usually use colby jack)
Shredded chicken (I usually use the already cooked chicken and just cut it up into little cubes)
1. Boil water to cook the noodles
2. Chop up vegetables
3. Cook or heat up already cooked chicken and chop up
4. Mix together cooked noodles, cream of mushroom soup, veggies, and chicken.
5. Preheat oven to 350 degrees.
6. Spray baking dish (I use a 9 by 13 one)
7. Put mixture into baking dish and top with cheese (as much as you want)
8. Bake for 25-30 minutes or until the corners start to brown a little.
9. Serve and enjoy!
Yeah it's very similar. I swear I could eat that like everyday of the week lol. It's also good for family's (or just the two of you) because there's leftovers. With Randy and I we can eat it about 3-4 different times.
Here's a really interesting one...someone made this for Mitch and I and we actually really liked it! It's for ppl who are looking to cut back on their carb intake.
######ake Mushroom Pizza
1 large ######ake Mushroom per person you're serving
Garlic (minced and mashed, to taste)
Take the ######ake Mushroom and remove all or most of the black part underneath. Flip mushroom upside down and spread Pizza sauce on it, as much as you prefer. Then add pizza vegetables (such as red, yellow, green peppers, onions...), minced garlic evenly, and sprinkle cheese (as much as you want), and bake in oven for 15 minutes at medium temperature or until cheese is melted and pizza is hot, and then broil for 3 minutes or until cheese is crispy on top.
Serve and enjoy!
