A simple one that I have used numerous times is 3-envelope potroast or roast.

1 Brown Gravy Mix
1 Italian Dressing Mix
1 Ranch Dressing Mix

I also put veggies and things in there as well.

Oooh, ladies, I have a few for ya:

This is in my crockpot today and it is one of the best-smelling recipes EVER:

Slow Cooker Chicken and Dumplings Recipe - Allrecipes.com
(With this one, read the reviews to make it tastier. I usually add frozen mixed veggies, herbs/spices, chicken broth, and only one package of biscuits.)

Another simple one I do is cook up pork butt/pork loin/whatever cut you have with some beef broth for 6-8 hours on low. Shred, add BBQ sauce, and you have pulled pork sandwiches. Easy and yummy.
