I like my version of green bean casserole....
1lb hamburger cooked mix with 1 can tomato sauce and French cut green beans....top with mashed potatoes and then cover with cheese slices and bake until the cheese is melted

We fixed that all the time when I was a kid! It doesn't get made much now though since DH doesn't like green beans. I substituted a can of corn once and it turned out pretty good that way too!

I like to make lasagna and chicken enchilada casserole.

Overnight Chicken Enchilada Bake

Ingredients:
1 pound boneless skinless chicken breasts, cut into thin bite size pieces
1 can (10 3/4 ounce) condensed cream of chicken soup
1 container (8 ounce) sour cream
1 can (14.5 ounce) green chiles (optional)
2 cans (10 ounces each) Enchilada sauce
12 corn tortillas. quartered
2 cups shredded cheddar cheese
1/4 cup sliced green onions (optional)

Directions:
Spray a 9x13 pan and 12x16 inch sheet of foil with cooking spray. Cook chicken in a skillet for 3-4 minutes, stirring frequently, until chicken is no longer pink in the center. Remove from heat. Stir in soup, sour cream, and chiles. In the baking dish, spread 1/4 cup of the enchilada sauce. Arrange 1/2 of the tortilla pieces over the sauce, overlapping as necessary. Spoon and spread 1 cup of enchilada sauce evenly over the tortillas. Spread 1/2 of the chicken mixture over the sauce. Top with 1 cup of the cheese. Repeat the layers starting with the tortilla pieces. Cover tightly with foil. Refrigerate at least 8 hours or overnight.

Heat oven to 375 degrees. Bake covered for 30 minutes. Uncover baking dish; bake for 20-25 minutes longer or until sauce is bubbly and cheese begins to brown. Let stand for 15 minutes before serving. Sprinkle with onions.

^ That sounds SOOO amazingly good!! If I wasn't on a diet right now, I would SO be making that and eating every last bite!! haha

I think lasagna or soup would be good to make. Both freeze well too!

I agree on lasagna - I made & froze that when I was pregnant. I also froze meatballs to easily have with pasta.

One of my new favorite casseroles is this: (not sure if it freezes well, haven't made it ahead)

I think I want to try that Enchilada bake!! bet you could substitute beef for chicken as well...

What about soups? You can make a few different kinds and freeze them in portion size containers. You could also do the same with muffins/quick breads.

Well, this is a 2 dish recipe because you have to brown the pork chops but it's one of our favorites, I found it in a cookbook my aunt gave to me 10 years ago but this is the same exact recipe.

This is my DD16 favorite casserole. It is easy to make and pretty cheap too.

One bag frozen ravioli
One jar spaghetti sauce
1 cup mozzarella cheese

Cook ravioli's according to directions.

Put a little spag sauce in the bottom of a 9 x 13 inch pan. Place a layer of cooked ravioli on sauce. Spread a layer of sauce over ravioli. Repeat. Add cheese to top.

Cook at 350 for 25 minutes or so.... until sauce is bubbly and cheese is melted.
