Well, it is actually Greek not Mexican Lasagna.

Meat sauce:
1 finely chopped onion
I tsp olive oil
Salt and pepper
2 tbsp tomato paste
4 garlic cloves, minced
1.5 tsp dried oregano
1 tsp ground cinnamon
1/3 c red wine (I use non alcohol cooking wine)
1 15os can tomato sauce

Pasta and Bechamel sauce:
8 oz macaroni
Salt and pepper
1 tsp olive oil
3 garlic cloves, minced
2 1/2 cups 2% milk
1 12oz can low fat evaporates milk
3 tbsp cornstarch
1 1/4 c grated pecorino Romano cheese
1/3 c Greek yogurt

Put oven rack at middle level, preheat oven to 375F.
Combine oil, onion, 1/8 tsp salt and 1/4 tsp pepper In large skillet.
Cover& cook over med-low heat, storing occasionally until soft (8-10 min).
Uncover, increase heat to med. stir in Tom paste, garlic, oregano and cinnamon. Cook until Tom paste begins to darken ( 1-2 min).

Stir in turkey. Cook til no longer pink (about 5 min)
Stir in wine and cook til alsmot all evaporated (2-4 min)
Add Tom sauce, simmer and cook stirring occasionally until slightly thickened (6-8 min). Set aside.

For pasta and Bechamel.
Bring 4 quarts of water to boil in Dutch oven. Add pasta and 1 tbsp salt. Cook until almost al dente (3-4 minutes).
Drain pasta well and transfer to large bowl.

Heat oil in now empty Dutch oven over med-low heat until shimmering. Add garlic and cook until fragrant, about 30 sec.
Stir in 2 c milk and evap milk and simmer, stirring often.

Whisk cornstarch into remaining 1/2 c milk, then whisk into pot. Continue to simmer, whisk constantly until thickened (about 6 min).

Off heat stir in 3/4 c pecorino and season with S&P to taste.

Stir 1&1/2c Bechamel into pasta until combined. Whisk yogurt into remaining Bechamel. Transfer sauced pasta to 13X9 inch baking dish. Spread meat sauce over pasta and top with remaining Bechamel. Sprinkle remaining 1/2 c cheese evenly over top. Bake until golden brown, about 30 min. Let cool for 10 min before serving.

I think tonight I am just gonna settle with leftovers...I got some pot roast and roasted chicken that needs to be eaten before I cook anymore....

I have NO idea. DH took chicken out, so something with that. I am lazy though. I do not want to cook anything!

But, I think I will come to some if your houses because these ideas sound delicious!

We had pineapple jalfrezi with chicken and naan bread. Kids loved it, will definitely be put on rotation!

I was going to make chili and let it simmer in the crockpot all afternoon.. turns out I only had half of the ingredients! so it's pasta, hamburger meat and sauce.. whatever that is lol and DH brought rolls home.

I didn't really feel like cooking last night so the kids had left over ravioli from the night before and I made myself some pasta with this lemon-garlic sauce I love but everyone else hates lol. Tonight we're gonna have pizza, home made. It's a house favorite.

poptarts and nothing
Was going to reheat pizza from yesterday, but we got home and the boys went straight to video games and haven't said anything and the "baby" asked for "ta-tarts" so I gave her some. My 3.5yo is asleep on the couch. I'm in trouble, I have to be up at 6am.
I'm sure in about 1/2 an hour when I start saying "bedtime" they will all be hungry and ask for cereal.
