So I finally have 3 mellon sized pumpkins but I see no sign of orange, they are all still green. Any ideas when they might turn orange?

We have quite a few that are already orange. What I don't know is when I should pick them. Is it better to leave them on the vine or pick them now? I think they are safer from my little monkeys if I leave them where they are!
