My DH and I are on a low carb diet to try to lose weight (and yes, I know frosting is not low carb  ). Lunch was pork chops left over from last night that I "breaded" in spices and parmisian cheese.
I took some chicken breasts out of the freezer and not sure what I am going to do with it.

I'm making baked chicken tonight with lemon glaze on top
broccoli & cauliflower with melted cheese and for dessert a berry parfait.

Oh yes, yum!
I was planning on making soft tacos (with ground turkey) but hubby made plans with friends for Ruby Tuesday. I'm trying to eat healthy but we have gone out with friends/family almost every day in the last 5 days!

Such a great thread!
I've been feeling so lazy, that I haven't been doing too much for dinner lately (last night was tuna helper)
Tonight I am making beef stew. Ok, so technically i'm making it now, since it's in the crock pot. Wasn't too hard to thaw some stew meat, and chop some veggies with some seasonings
I don't know what I would do without my crock pot (pots, seriously I have maybe six, in various sizes haha)

I love my crockpot too! Uggg.... I should have thought of just throwing the chicken in there with some soy sauce and spices.

I am marinating chicken breasts in a sweet vinagrette dressing. I will stir fry with some frozen vegetables for dinner.
Missy - if you ever need suggestions, I have a whole bunch of recipes that are considered low carb (mainly because I am gluten/wheat free which eliminates many carbs)

i put a pork roast in the crockpot last night, but im not sure how i will serve it, maybe turn it into gravy and have it over rice or potatos or maybe throw it in a wrap with baby spinach and cilantro and garlic mayo. i love my crockpot too!

nothing good...I've been running errands all day, so I didn't have time to start dinner or thaw anything out...I think we'll have grilled cheese and tomato soup.

Megan- Totally love grilled cheese and tomato soup! Best comfort food. Ever.
I love chicken. It's my favorite. Unfortunately, DH HATES it! (Unless I am able to disguise it, like in enchiladas or something.) So whenever I want chicken, I usually have to make something else that he'll eat. Which is otherwise pretty simple (he'll go for a grilled cheese as long as I use real cheese, and not the kraft singles or anything)
