Share your favorite recipe I love trying new things and I love to cook.




Cheeseburger & Fries Casserole

Ingredients:

Servings:6

* 2 lbs lean ground beef
* 1/4 teaspoon salt
* 1/2 teaspoon pepper
* 1 teaspoon minced garlic
* 1 (1 1/3 cup) can cream of mushroom soup
* 1 (1 1/3 cup) can cheddar cheese soup
* 1 (1.10 lb) package frozen French fries, any style
* 2 cups cheddar cheese, shredded


Directions:

Prep Time: 15 mins

Total Time: 50 mins

1. 1 Preheat oven to 375 degrees.
2. 2 Scramble fry ground beef until cooked.
3. 3 Drain off grease.
4. 4 Then add salt, pepper and garlic.
5. 5 Add both soups and stir until well blended.
6. 6 Heat through on stove and then transfer to 9 X 13 glass pan.
7. 7 Cover beef mixture with the french fries.
8. 8 Bake for 30 minutes, until fries are crispy.
9. 9 Sprinkle cheese over top of casserole and return to oven until cheese is melted, about 5 minutes.

A staple in our home....Pancakes. Basic recipe, but you can do fun stuff to mix it up like add fresh banana or chocolate chips.

1 cup flour
1 cup skim milk
2 tsp baking powder
dash of salt
2 Tbsp sugar (white or brown)
1 or 2 eggs (works well with either)
1 tsp vanilla

Combine all of the above ingredients.

Then add,
2 Tbsp butter melted

Fry in a pan on medium with melted butter.

I often double this recipe. My kids love them They freeze well for mornings you don't have time to cook. You can also change the flour to whole wheat or 1/2 white and 1/2 wheat. I've added pureed sweet potatoes or even applesauce before. Sometimes you have to leave out some of the milk to make it just right.

Thanks this is a great idea! I love trying new recipes so it will be fun to check back and see what yummy stuff people like to make.

Ooh, I wish DH liked pancakes and cheese...or both of these would be on today's menu!

My favorite recipe is a salad that I made up - its basically mixed greens with chopped up whatever fruits and veggies I can get my hands on (grapes, apples, cherries, strawberries, onions, etc...) mixed with a few chopped up avocados, goat cheese and candied pecans. For some reason, when its made with strawberries, the mixture of the cheese, strawberries and pecans make it taste like dessert, only its actually really good for you. :-) No dressing necessary, as the cheese/avocado make a dressing all by itself.

This sounds wonderful .... except for the onions

Pumpkin Chocolate Chip cookies

1 c. shortning (butter flavored)
2 c. sugar
1 egg
2 tsp vanilla
2 c. pumpkin
4 c. flour
1 tsp salt
2 tsp cinnamon
1 tsp cloves
1 tsp ginger
2 tsp baking soda
2 tsp baking powder
12 oz chocolate chips

Cream shortening and sugar; add egg, vanilla and pumpkin. Mix well. Add dry ingredients and then chocolate chips. Bake on greased cookie sheet @ 375* for 12-15 minutes

((I add more vanilla, 1 tbsp instead of 2 tsp))

This is what I made for Dinner last night and it is very low carb!

BAKED MEATBALLS
1 pound ground beef
1 pound bulk Italian sausage
2 teaspoons dry minced onion
1/2 teaspoon garlic powder
1/2 cup parmesan cheese, 2 ounces (I used the kind in a can)
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
Mix all of the ingredients in a large bowl using your fingers. Mix until the meat no long feels slimy from the eggs. Shape in golf ball size meatballs and place on a large baking sheet with sides. Bake at 375º for 15-20 minutes until the meatballs are done all the way through

Right now, i'm making BBQ pulled beef sandwiches.

I used a roast and put it in the crock pot with a can of beef broth, and then after it was done cooking, I took it out--emptied the crock pot and shredded the roast. I put it back into the crock pot, shredded with just enough honey BBQ sauce to coat. Then you cook that for about an hour. YUM!

I'll have to pull my cookbook out but it's a Weight Watchers beef stew. So easy. 5 minutes prep, stick it in a dutch oven type dish and cook for 2 hours.

Crockpots are the best! I made a lentil soup last week with mine, just used veggie broth, chopped carrots, celery some spices including curry and a bunch of the green french lentils. Turned out fantastic.

One of my friends mixes in canned pumpkin and coconut when she makes curried lentils as well...very interesting, healthy and surprisingly good. And I'm not even vegetarian! :-)

Now I'm craving bbq beef. MMM. These darn food posts! :-)
