Do you have any recipes for dinners that you can cook ahead of time, freeze and then just reheat? I need some so I don't have to cook every single night.

lasagna freezes well if you don't cook the pasta all the way. No before al dente.
Then when you cook it, the pasta finishes cooking.

I don't have any off the top of my head. We've been so lazy lately with cooking. Sometimes I just eat cheese because I don't feel like doing anything else. Bad bad me.

this past summer I canned (technically I jarred) a bunch of tomatoes, peppers and zucchini with pasta sauce as the liquid and now when I want to make fast pastas, I just dump that stuff into a baking dish with frozen spinach, mozzerella and gorgonzola and pasta (cooked) and I don't have to chop the veggies. Plus the zucchinis get soft sitting in the liquid for months, so you only really have to cook everything long enough to melt the cheese and heat the stuff.

I know that's not terribly helpful, but that was my brain dump. Happy day.

I don't have any particular recipes in mind, but I almost always freeze some of what I make since there's only 2 of us. Things that came out pretty good after freezing were pasta bakes, lasagna, soups (like minestrone or chicken noodle), quiche (it comes out perfect!)... the only thing I've ever made that came out not worth eating was a cream-based soup.

Spaghetti sauce freezes really well. You can also precook rice and freeze it. It thaws out really well. I only make brown rice, and it is a time consumer, so freezing it cuts down tremendously. I also freeze snacks, like muffins and cookie dough and banana bread. When I bake, I usually triple the recipe and freeze the leftovers.

This is good to know. We only make brown rice too and it never occurred to me to freeze it.

Dh makes a good soup that we cook a big big pot of then we freeze it. He cooks it almost all the way through then we freeze it.
