I try to do mass food prep at least once a month. Today I am prepping and freezing Cheese Steak and Mustard Oregano pork chops. Just makes cooking during the week more tolerable and obsessing over my chart a little bit easier. LOL

Do you have the recipe for those chops? they sound good!! We have used mustard before when making porkchops.
We haven't done anything this weekend. We deep cleaned some part of the house on Friday and yesterday watched a couple of movies. We might play some games on the wii here in a little bit.
We did get a funny photo of the cat today though:

Missy and Melissa:
I try to do a couple of recipes every couple of weeks. Each recipe makes 3-6 dinners and then I just work the new ones into the rotation. Most of them are not cooked before they are frozen so they don't taste like leftovers. Some of our favorites so far have been the mexi-stuffed peppers, apple cranberry pork loin, steak skewers with bleu cheese dipping sauce (I don't like the sauce- ewww bleu cheese-lol) and beef and bean burritos. The burritos taste good but my favorite part is that they can be prepared frozen so on days that were busy, or I just plain forgot to plan a dinner, I can pull them out and throw them in the oven and they are just as fast as a frozen pizza or some other "prepared food" just without all the preservatives.
Anyway! On to the recipe!
Mustard-Oregano Chops
Makes 3 entrees, 4 servings each
1 TRAY (6-8 pounds, or 12 chops) PORK LOIN CHOPS, BONELESS OR BONE-IN
1/2 cup prepared mustard
1/4 cup red wine vinegar
1/4 cup lemon juice
1/4 cup vegetable oil
2 TBLS honey
3 tsp dried oregano
3 tsp minced garlic (about 9 cloves)
3 one gallon freezer bags
1. Rinse and divide chops evenly among the freezer bags.
2. Whisk together the mustard, vinegar, lemon juice, oil, and honey in a medium bowl. Divide the marinade evenly over the chops. Into each bag, measure 1 tsp oregano and 1 tsp garlic.
3 Seal and freeze.

Um worked last night, no pictures of that. It was wretched. Woke up this morning and couldn't move. Had to take 2 pain meds to make it a tolerable morning.
Today went on a walk in seashore with my sdd, bff and her 2 dogs. The later Dh came home and kids from their dad's, tonight we went to ihop (had ****** service) no pix of that either.
But my little niece was born this morning...

Maria - Thanks for the recipe!! I am going to have to take the honey out of it as my DH is on a low carb diet but this sounds like an awesome solution to save cooking time during the week. I am going to do it tomorrow! As far as the TX hair goes, I wish we could all get together and have a girls night!

Missy your hair is very pretty! I would be up for some big Texas hair lol...I saw a lot of it living in Texas haha (grew up there). I had big hair in the 80s haha.
Also that pork chop recipe sounds fantastic. Thanks so much! We buy our meat in bulk already then divide it up and put it in freezer bags when we get home. So something like this is very nice to have. I have made bean/beef burritos before and froze them. I love them like that. We also make southwest eggrolls like the ones at chilis (I triple the recipe). We divide those up into bags and freeze those as well and then put them in the deep fry. We usually make a meal out of those and bacon/cheese tater skins with home made ranch. SO freakin good!

I realized last night in the middle of the night (seriously) that I forgot to write how to cook the chops! I promise to come back later this afternoon when I have more time and add that part in. Such an airhead I am... LOL

I'm sure you could cook them up however your prefer but the recipe says to arrange on a greased broiler pan. Broil chops under high heat 5 in. from heat source turning frequently for 15-18 minutes or 160 degrees. Baste chops as desired. Do not baste during the final 5 minutes of cooking. Discard remaining marinade.
I kept one dinner out of the freezer so we could have it for dinner tonight. I'll let ya know how they turn out.
FYI- I use the book called Fix, Freeze, Feast. I love it!
