I made eggs and bacon for breakfast. I just ate the bacon and am eating a cadbury egg right now, lol. mmmmmmm
Dinner consists of squash casserole, chili cheese fries and hamburgers.
What are you eating today?

I had waffles for breakfast, a lunchable for lunch since we are helping my in-laws redo their kitchen, and my MIL is making onion crusted chicken, carrots, and mashed potatoes for dinner.

It is boneless, skinless chicken breasts dipped in eggs then coated in crushed french onions. It is yummy and super simple!

Breakfast was a bagel topped with strawberry cream cheese.
Haven't gotten to lunch yet. I'll probably just snack a little.
But dinner is Chicken and Gnocchi soup. My favorite in the world! (The second best thing I make besides enchiladas)

I love hearing what other people eat! I'm kind of a food nerd!!!
Breakfast: 3 egg whites, 1 whole egg, 1/2 cup oatmeal with 2oz blueberries, 8g walnuts and a splash of almond milk.
Snack: 2 choc. rice cakes with almond butter
Lunch: 3oz deli sliced chicken breast, mozz cheese on a wrap, 3/4 cup edamame
Snack: cupcake at my nieces bday party and a South Beach Bar
Dinner: will be this chicken stew I made with Quinoa!!

OH Missy. I LOVE squash casserole. I make a couple of different versions of it. I just love squash!
As for me, I had a Mcdonalds breakfast burrito at about 6 am this morning (went to work at 5:30). Then came home and slept till 12:30 pm and we made a very late breakfast but we always do a breakfast on Sundays. We had maple sausage links, country gravy, buttermilk biscuits, eggs, and hashbrowns. Hello 400 lbs
I am getting hungry again though. I think I will make chicken strips with mashed taters and have the left over gravy from this morning with that too.

Missy-
Here is the recipe:
1/3 cup olive oil
a pinch of garlic salt
1lbs Chicken cut into bite size pieces
1/3 cup flour
1/2 cup to 1 cup shredded carrots
1 to 4 sticks celery
1/2 cup to 1 cup spinach
2 1/2 cups milk
1 1/2 cups heavy whipping cream
3 chicken bullion cubes
1 package pre-made gnocchi
1 can chicken broth (optional)
*On medium heat cook chicken and garlic in a large pot in olive oil until cooked through.
*Stir in flour, and mix until the flour is cooked into the chicken
*add the rest of the ingredients except for the gnocchi
*cover and simmer for at least ten minutes (you can do it as long as you want too) stirring occasionally
*add gnocchi, and cook for at least 3-4 minutes, and then you can let it simmer on low heat, for as long as you like or you can serve it immediately.
**If you want it to be a little bit more brothy, you can add as much of the chicken broth as you would like. Wait until after the gnocchi is cooked first, before you add it in though.
This is my favorite, and it tastes exactly like Olive Gardens! It also tastes very good with shrimp instead of chicken as well! You can also add any other veggies you want too. That combo is just my favorite.

I had some oatmeal for breakfast.
Ribs, beans and cornbread for a late lunch.
Now I am getting hungry again, but nothing sounds good.

How does the spinach work into the recipe? Does the flavor stand out at all? I am not a huge spinach fan but the rest of it sounds soooooo good!

I'm not a fan of spinach either, Missy. The only reason why I added it when I made it was because I was trying to make it as close to Olive Garden's as possible--and when I made it with it--I couldn't really taste it too much, and I liked the colors it brought to the soup. (Though I add close to a half cup of spinach, when I add the full cups of carrots and celery. So that might have something to do with it. While there is not many spices in the soup (though you can add whatever you like) there is so much flavor that you can't taste it.
