I made a ham on Sunday so I think I will heat up some green beans and have leftovers! Easy Peasy dinner tonight here.

We put in a venison roast in the crock pot last night so its cooking wihle we are at work.
We are having Ham on Sunday for Easter.

Thai green curry with chicken over rice..mmmmmm ... but then my treadmill is coming later.. and I think I upset my back moving my living room around last night so i may not feel like cooking... if that should be the case, the kids get pizza and I get a salad...

I had a ton of roasted veggies...sweet potatoes, asparagus, red onion and honey roasted carrots. Was going to add beets but they take forever to roast and I only had about 40 minutes. DH had rigatoni with marinara sauce. I think my dinner tasted much better (and was probably healthier than his too)

I LOVE Thai green curry. Its my favorite Thai dish..I could eat it every day. In fact, that just may be tomorrow's dinner for me.

We had baked talapia with micro greens, spinich feta salad with pears and cranberries, homemade garlic rosemary naan and artichokes roasted in wine.

For desert I made a Flamboise infused Strawberry Gelee for the hubs and a Coconut Panna Cotta for me.

My 1 year old already is an adventurous eater. My dad raised me to eat what was in front of me or not eat at all. Lol.

Now my son eats everything from starfruit to flummery.

Thinking of Cornish Game Hen tonight maybe, or I might do Coddle. Decisions....
