I have to make cookies for a wedding next weekend. Anyone have any quick and easy recipes that are yummy? They are having a cookie table and I'm the maid of honor and have to make 4 dozen...

Hey Katie, here is an easy recipe to oatmeal raisin cookies from Cooks.com - Recipe Search and More Cooks.com - Recipe - Oatmeal Raisin Cookies This yields 4 dozen cookies.

I make peanut butter cookies with lindt chocolates in the middle. They are HEAVEN!

I don't have it with me. This is probably the right recipe.

Replace the snickers minis with Lindts, so much better. Also, I refrigerate the dough for an hour or two before I make the cookies because it makes the dough less sticky and easier to shape. Keep flour nearby to dust your hands because the dough sticks to your hands otherwise.

They are very messy, but super yummy.

Also, I don't bother putting any chocolate on the top of them because the Lindt candies are great, but it's an option.

I have a cookie book with over 200 recipes in it. I would not know where to start. Although my favorite cookie is the "Little Bit of Everything" cookie recipe. It is an oatmeal, chocolate chip, and peanut butter cookie. Let me go and look through my recipes.

A Little Bit of Everything Cookie Recipe (from my church cookbook)

1/2 cup margerine or butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup flour
1 cup oats
1/2 cup coconut (I never add this because I HATE coconut, but it is an option)
2 cups semi-sweet chocolate chips

Preheat oven to 350 degrees. Cream butterm peanut butter, and sugars together. Add egg, vanilla, baking soda, and salt. Stir in flour, oatmeal, coconut, and chocolate chips. Drop by balls on to cookie sheet, Bake for 8 to 9 minutes, or until fully cooked.

Also, instead of the coconut, you can add raisins or nuts. Go crazy. Make your own everything cookies.

When I have to make cookies quick I buy a sugar cookie mix and mix some cinnamon sugar into it. I then form little dough balls and roll them in the cinnamon sugar. I follow the directions on the mix. And ta da delicious snickerdoodles in half the time.

Frosted Carrot Cake Cookies (sounded good)

Cookie
2 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
2 cups freshly shredded peeled carrots
1 cup chopped pecans (optional)

Frosting
4 oz cream cheese, softened
1/4 cup butter, softened
2 cups powdered sugar
Chopped pecans (optional)

Peheat oven to 350 degrees. Combine flour, baking soda, salt, and spices. Set aside. Cream butter and sugars. Add eggs, beating until light and creamy. On low speed, gradually add flour mixture until blended. Stir in carrots and pecans.

Drop dough by spoonfulls about 2 inches apart on prepared cookie sheet. Bake 10 to 14 minutes until golden. Cool 5 minutes on cookie sheet before you move over to wire rack to cool completely.

Frostig: Cream butter and cream cheese until smooth. Gradually add powdered sugar until smooth. Spread over tops of cookies and then sprinkle with nuts, if using.

Hmmm.... Found another that has coffee in it and sounds good. I am off to bake to try them out for you!

these all sound so yummy! I really want to try Courtney's but I ALWAYS burn my cookies...lol

Well tried those other cookies that had coffee in them. NOPE. They had an excellent spice flavor to them, almost like spiced coffee, but the consistancy was horrible. I will need to experiment with them first as I always follow the recipes to the "T" the first time around, and then adjust it as needed or I see fit.

Cooking is my passion! Right now I am contemplating switching majors to Pastry Chef instead of Elementary Education. I LOVE LOVE LOVE LOVE LOVE to be in the kitchen cooking and feeding people. I guess it is the Cajun in me. I could spend all day in the kitchen cooking if I could.
