I'm planning my freezer menu to freeze meals ahead of time. Chris is deploying only 4 weeks after Baby "Slater" is born and so I need to prepare a lot of frozen stuff ahead of time. I'm thinking of buying some plastic bins to use in my freezer to help organize it all.

I don't typically freeze meals, but I've done lasagna a few times. It freezes well and is easy to cook later.

I'm not a pasta fan, except Spaghetti. And I can't stand lasagna. I don't like ricotta or cottage cheese.

Soup frozen in muffin tins, then popped out and put in freezer bags so you can thaw what you need when you need it, and different soups for different kids if necessary.

I make my lasagna with mozzarella cheese only. I can't stand cottage cheese in lasagna either. I like fetuccine alfredo with broccolli and chicken, I make oven baked meatballs with garlic and use them in stir fries or spaghetti afterwards. Muffins, pancakes and bagels also freeze well and work well for breakfast options. And I LOVE shepherd's pie, so I always make a bunch to freeze.

I've just started a freezer meal club. I've loved the chicken pot pie, sausage rice casserole, mashed potato cups, white chicken chili, and baked ziti (it could be spaghetti noodles if you wanted. No ricotta or cottge cheese, just provolone and mozz.)
I've got recipes if any of them sound good to you.

Ok, I sent them off, but forgot to tell you that there's a part that has it multiplied because there are 4 of us in the group. I think each recipe has a portion that only serves 4-6.
Anyone else have some good ones? We need ideas for December!

I have a good recipe for Mexican Lasagna if anyone wants it. It is totally yummy. I usually freeze spaghetti sauce and chili to have ready. I have a recipe for a tortellini casserole too - it uses those frozen tortelinni's from the store.
