Hard to narrow it a favorite for me, but I guess Hamentaschen is my fave. I make over 1000 cookies total (tons of varieties) for Christmas every year, and this one is one that I make every year without fail.
Cookie ingredients:
2 1/2 cups all purpose flour
1/2 cup sugar
1 teaspoon baking powder
3/4 cup butter
1 teaspoon grated lemon peel
1/2 teaspoon pure vanilla extract
2 eggs
Filling (either prune, apricot or plum, or poppy seed)
Filling ingredients:
Prune:
1 12oz package pitted prunes
1 cup chopped walnuts
2 tablespoons honey
1 tablespoon lemon juice
Heat prunes with enough water to cover to boiling in saucepan; reduce heat. Cover and simmer 10 minutes; drain. Mash prunes, stir in remaining ingredients.
Apricot or plum (my personal fave is apricot):
1 1/2 cups apricot or plum jam
1/2 cup finely chopped almonds or walnuts
1 teaspoon grated lemon peel
1 tablespoon lemon juice
about 1/2 cup dry bread crumbs
Mix jam, nuts, lemon peel and lemon juice. Stir in enough bread crumbs until it is thickened.
Poppy seed filling:
1 cup poppy seed
1/4 cup walnut pieces
1 tablespoon butter
1 tablespoon honey
1 teaspoon lemon juice
1 egg white
Place all ingredients in blender or food processor; blend until smooth.
Cookie directions:
Mix flour, sugar and baking powder in large bowl. Cut in butter, using pastry blender or 2 crisscrossing knives, until mixture resembles fine crumbs. Mix lemon peel, vanilla and eggs in another bowl. Stir into flour mixture until dough forms a ball, you can use your hands for this if needed and add up to 1/4 cup more flour if it gets too sticky. Cover and refrigerate for 2 hours, or until firm.
Prepare desired filling. Heat oven to 350F. Roll half of dough out to 1/8 thickness on lightly floured surface. Cut into 3-inch rounds using cutter or drinking glass. Spoon 1 teaspoon filling into each round. Bring up the sides to form a triangle around the filling. Pinch edges together. Place about 2 inches apart on ungreased cookie sheet. Bake 12-15 minutes or until light brown. Remove immediately to cookie rack.
