Mississippi Mud Pie

Bottom layer:
1 1/2 cups flour
1 cup pecans
1 cup butter

mix and place in 9x13 pan and bake for 15 min (or until edges start to pull away from sides)....let cool (I sometimes place it in the freezer if I'm in a hurry, to speed up cooling)

2nd layer:

8 oz cream cheese
a little less than half a 16 oz tub of cool whip
1 cup powdered sugar

mix all the above ingredents till smooth...you can leave cream cheese a little lumpy if you like it that way...spread mixture over crust

3rd layer

mix one box of instant chocolate pudding and one box of instant vanilla pudding with 3 cups of milk (i usually get the large boxes)...mix until mixed well and place over second layer

4th layer

place remaining tub of cool whip on top

Yummy....I have to make this for my DH's Thanksgiving Dinner at work

Cheesy Potatoes

Ingredients:
2lbs frozen hash browns
1 can cream of chicken soup
1/2 cup melted butter
1/4 cup minced onions (optional*)
1lb sour cream
8oz shredded cheddar cheese
1 cup bread crumbs

Thaw the potatoes completely. Mix together all remaining ingredients with potatoes except the bread crumbs for the topping. Place in 9x13inch baking dish. Sprinkle with bread crumbs and bake 1 hour at 350 degrees.
(Use ˝ of this recipe for a family of 6)

*Onions are only optional because I hate them and MOM knows that

This does make a LOT of potatoes.. but I make them for just hubby & me (full recipe, not ˝ ) and the leftovers don't last long!

Here is my current fave, these are an awesome side!

Oven-Fried Potato Wedges

3 large baking potatoes
1/2 cup mayonnaise
1/2 teaspoon hot sauce
1/4 teaspoon onion salt
1/2 teaspoon House Seasoning, recipe follows
1/8 teaspoon black pepper
2 cups cornbread dressing mix

Preheat the oven to 375 degrees F.

Wash the potatoes and cut each into 6 thick wedges. Mix the mayonnaise with the hot sauce, onion salt, House Seasoning and pepper. Coat the potato wedges with the mayonnaise mixture and roll them in the dressing mix. Place in a greased baking dish and bake for 45 to 50 minutes, or until the potatoes are tender. Serve with your favorite dip.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.
