It's a veggie muffin recipe. These work great because they are easy to make, have a TON of veggies in them and the kids don't know they are eating all these veggies!
2 cups flour (wheat or white)
1 tsp. baking soda
1/4 tsp salt
1/4 cup butter/margarine
1/3 cup brown sugar (or another sweetener)
2-3 tbs honey (optional)
3 cup pureed veggies (any will work - you can put in whatever you have on hand! I've tried putting in a mixture of potatoes, carrot and sweet potatoes. I've even used leftover jarred baby food! You can also put in fruit - it was just be a bit more moist.)
1 tsp vanilla
2 tsp cinnamon
350 degrees for about 15 minutes...my mini muffins took 15, but larger ones will take longer!
I typically make the mini-muffins and freeze about 3/4 of the batch, and take out a few each day (or whenever I am doing to feed them to him).
