I made these today and they were a huge hit! I have been testing out different things since my 5 year old is in kindergarten now, getting different ideas for her to take in her lunch.
Anyhow, here is the recipe:
1 can of Pillsbury pizza dough
1 jar of pizza sauce
1 bag of shredded cheese (I used pizza blend)
pepperoni, or any other stuffings for the pizza pocket
Preheat the oven to 425 degree
Spray pizza pan with cooking spray
On a cutting board, or the counter, unroll the pizza dough and spread out.
Cut into rectangles (you will fold it over to create your pizza pocket) or into even sized squares (you will place one piece of dough on top of another to create your pizza pocket). I cut mine into rectangles. If you're cutting into squares, sit half of the squares aside. Move the rectangles or half of the squares to the pizza pan.
Sprinkle cheese on the dough (I didn't want to put the sauce down first, I thought the dough might get soggy)
Top the cheese with pizza sauce (I just spooned it on)
Place your pepperoni or other toppings on the sauce
If you're using rectangles, fold the rectangle over on itself and press around the edges to create a pizza pocket.
If you're using squares, grab your 2nd half of squares and place them on top, and press around the edges to create your pocket.
Bake in the oven until golden brown. It didn't take very long, maybe 10 minutes? (I'm bad, I never use a timer)
