Does your family eat vegetables on a daily basis?

Which do you serve most often? And how do you cook them?

I try to make sure we eat some sort of vegetable on a daily basis. The favorite is potatoes, but we also do a lot of corn, a variety of beans, spinach, and broccoli.

I honestly dont make them everyday, though I should ...
But most nights I try to make a veggie with dinner. Mostly potatoes,corn or green beans, and sometimes peas or broccoli. We rarely have carrots, only DH likes them, lol. But I do buy the kids the Harvest Suprise Juicy Juice which has veggie and fruit juices, so that I can sneak those in there that way!

We almost always have a salad with romaine lettuce and spinach, with whatever other fresh veggies around. Peppers, onions, tomatoes...Em loves them all. Tomatoes are her favorite, she loves spinach cooked and uncooked......corn, peas, beans, peapods, bamboo, baby corn.....the only thing she has decided she doesn't like are carrots LOL. But she'll eat them in rice or with noodles. Just not alone. Nutty kid.

I try to serve a vegetable at lunch and at dinner. We eat all the normal veggies: carrots (cooked and raw), broccoli (cooked and raw), green beans, mixed veggies, peas, cucumbers, spinich, corn. Connor is a great veggie eater, which I am very greatful for. I love veggies. My DH is another story, though. He's eats a vegetable every other day if he's lucky.

We aren't as good as we should be... I try to include 1 veggie in a day... corn, sweet potatoes, broccoli, etc...
