I made some today, and took a mix of about 3 different recipesI found and here is what I came up with. We eat TONS of mixed granola here and it's just so expensive to buy it every week. Thought I'd share. I cant stop eating it!

Preheat the oven to 325 degrees F

In a large bowel mix:

2 Cups old-fashioned oats (not instant)
1 tsp salt
1 tsp cinnamon

Then in a separate bowl mix

3 tablespoons plus 1 teaspoon vegetable oil
1/4 cup honey
1/4 cup firmly packed light brown sugar
1 teaspoon pure vanilla extract

Pour the honey mixture over the oats mixture and use your hands to combine it until all of the oats are coated with the honey mixture.
(I ended up adding some sugar free maple syrup because it wasn’t enough to make it stick together and I was out of honey)

We put dried apples, dried bananas, dried cranberries, and then whole almonds, and halfed pecans (was supposed to be walnuts but I grabbed the wrong one). Mix all that together and then spread on a baking sheet and cook until golden brown, it took about 30 minutes for me. It will still seems soft and mushy but will crisp up after you set it out to cool, and it took about 30 minutes to cool then I broke it up, and put it into a container.

For Kaitlyn’s I didn’t add anything until the granola was done and cooled, and then in her’s I added yogurt covered raisins, and chocolate chips, along with dried bananas.

Both turned out VERY good, and lots of it. I heard you can freeze it to keep it fresh but haven’t tried that.

Enjoy!
