I'm basically in the same rut. Juliana is lactose-intolerant so I've had to cut out most cheese, not to mention beans, broccoli and cabbage. It's so hard to figure out what to make! One of my favorite recipes is southwest chicken, and I can't have it now. There are lots of variations if you google it, but the main ingredients, are chicken, black beans, tomatoes, salsa, and cheese.

I have been buying frozen Tortelloni and adding sautéed mushrooms zucchini and squash. Soooo good. And fresh market has some great soups. I haven't been in a cooking mood lately and those are super easy to prepare.

We've been eating a lot of stuff on the grill. Most of the stuff we like isn't very healthy (loaded with cheese or bacon) lol. The crock pot usually works well, when I dont burn whatever is in it. Normally I put a roast with cream of mushroom soup and onion soup mix in it and its great by the end of the day.

I'm making rice pasta with shrimp and brocolli tonight. Super simple and yummy!

Mariah, if you use butter without lactose (we use Earth's Balance) it is also a lactose free meal.

Make pasta as normal.
With the shrimp, use fully cooked and detailed shrimp for the easiest dish. Marinate with oil (I use EVOO), garlic, and other spices to taste. When pasta is done, mix it all together using butter (about 2 tblspoons or so) and cooked broccoli.

I swear we eat so much chicken and fish, but we're okay with that---I just feel like we're doing something wrong. We have two go-to meals....Wheat pizza dough and homemade pizza from TJ's and the Tilapia at TJ's with brown rice and asparagus. I ended up going hiking earlier so I have yet to go to the store, I'm going to seriously copy what everyone says lol

Great idea! I'm nursing and work out a few times per week so I'm burning quite a few calories. Then I have all of these dairy-free meals that are low in calories, so I'm just inhaling food constantly! I know it goes against conventional diet advice but I need to make higher calorie meals.

We've been grilling like crazy. Tonight we had steaks, corn, and asparagus. Last night it was all you can eat crab legs at this local irish pubish restaurant...yum-o! I know that doesn't help your dilemma, lol.

Home made meatballs or meatloaf with mashed potatoes. Sweet n sour sauce for the meatballs. Yummy!! DD loves it. When she was little we would cut up the meatballs/loaf and she gobbled it up. Same with the mashed potatoes.

Also, perogies are a soft cheese filled pasta that she loved too.
