Just a quick caution....watch the peanut butter and eggs. Some docs (like mine) say to wait to introduce those.
With the veggies, are those all fresh? So far we just do frozen...such as the frozen peas.
One of my "go to" dinners in a Turkey hot dog for Emmett.

Tofu is another really easy protein option and you don't even have to cook it.

Seema, with the peas, what I do is put the frozen peas in a bowl and cover them with water and then microwave for quite a few minutes (I choose the highest number of minutes on the package). Then they are super soft when they are done and I feel good about not cutting them up.
Your DH is cute though, haha.
We have also had good luck with those frozen Steamer bags of broccoli. It comes out really soft too and then I tear it up and give it to him.
Keep the ideas coming, please! I'm writing a shopping list.

bites of string cheese, grilled cheese sandwiches, ravioli, cut up green beans (cooked), cut up cooked carrots, mango, broccoli, cauliflower
Basically I try anything except peanut butter, egg and honey.
Grilled cheese sandwiches in really little bites was a HUGE hit for her the other night.

My kids favourite meals
Coconut milk, Red Lentils, Coriander, Tomatos & Grated carrots simmered and serve with Rice. Can be pureed and frozen.
Chicken Soup with any vegetable you can find in your fridge, a whole chicken (deboned obviously) and low salt chicken stock. Can be pureed and frozen.
Spaghetti sauce - diced tomatos, grated carrots, grated apple, graded red onion & mince beef. Can be pureed and frozen. I make fresh pasta to go with this.

I tend to use a lot of frozen veggies with Maggie because they're easier to portion out. And so much of it is better frozen than fresh. I am giving her fresh everything else though. Fruit tends to be frozen a lot too. Easier to cut and comes presliced and flash frozen from costco...I don't waste a lot that way.

Last night DH made chicken and veggie stir fry. Maggie really enjoyed it, so we can now add bean sprouts, and tofu shiritake noodles to the list!

We keep frozen veggies on hand too for a quick dinner and lunch meals. She refuses to be fed anything so for lunch she just had a plate of mixed veggies she fed herself.

Tonight we had lemon herb chicken with peas and saffron risotto. DH and I had a salad with ours instead of peas.

I recently discovered individual portion veggies that are in little plastic cups like fruit comes at Wal-mart. It's a perfect portion for Arianna

Made homemade easy peasy pasta primavera yesterday and it was a hit. Totally a one pot wonder kinda meal. And you could totally throw this on the table with grilled chicken or shrimp. We had it for lunch and I was lazy so it contained no meat. Thought I'd share the recipe just cuz.
boil any kind of pasta you like to al dente.
Sauce
1 can of diced or crushed tomatoes drained slightly
4 tablespoons of cream cheese
1/4 cup of milk or half and half cream
1 tbsp of italian seasoning
1/2 tsp of garlic powder
1 tbsp of shredded parmesan cheese (kraft grated is what I used)
salt and pepper to taste
In a saucepan bring the tomatoes to a hot simmer and add the cream cheese and milk. Add seasonings and stir til the cheese is melted and fully incoporated. Add precooked frozen veggies. I threw in about 1 cup of california mix veggies, a can of cut green beans and a full cup of spring peas and peaches and cream corn.
Toss it all together and pour it over the pasta - super simple and super yummy!
