lol...It was dead easy. You're going to laugh when you hear what I did.
So I had a partial jug of premixed margaritas left over in the fridge - I just don't drink enough to make it disappear fast enough, but it's yummy. I never measuer anything either, so measurements here are estimates. Be sure to taste it as you go. That's the fun part!
2 cups of premixed margarita - note, in the past I've done this with 3-4 ozs of a good tequila and 1 cup each of lemon and lime juice.
1/2 tsp of minced garlic
1/2 tsp of fresh thyme
1/2 tsp of fresh basil
1/2 tsp of fresh parsley or cilantro
1/2 tsp of fresh rosemary
3 tbsp of olive oil
salt and pepper to taste
Marinate the meat in this sauce for about 3 hours. Then grill it til done. I have used this on chicken, tilapia and now the pork. I've also baked the meats before as well and when I do, I throw the whole thing in a baking dish, marinade and all. The tilapia I generally pan sear but it's good baked/poached too. For a straight lemon herb marinade (which I do most often), I just drop the tequila (or in this case, margaritas) and use straight lemon juice. You could also throw in some finely minced jalapeno. That would be super yummy, but I didn't have them on hand.
It was a big hit by the way. Maggie quite enjoyed it. We had it with salad, mashed potatoes and creamed corn.

That sounds so good ... and gives me an excuse to buy tequila.
We were really bad today. For breakfast I had a protein shake and the kids had cereal. For lunch....um we really didn't eat lunch.. Dinner was chipped beef for the kids and another protein shake for me. WOW...that is bad
