I am making stuffed chicken thighs, mashed potatoes from scratch, sautéed asparagus and I've already got a strawberry ice cream terrine setting up in the freezer for dessert.

So ladies... what's on the menu at your house tonight?

That's so funny, I was just coming in here to post this! Coley...it sounds like ya'll are having a terrific dinner! I think i'm going to make a chicken casserole, that has chicken, veggies, and other stuff in it and has biscuits on top! Not too sure yet though...I may be inspired to make something else after reading this thread!

I will make skinless chicken breast strips + a large organic green salad dressed with strawberries, sugared almonds, goat cheese and dried cranberries in raspberry vinaigrette + steamed sweet plantains.

That salad sounds great!!!

We are grilled teryaki boneless chicken breasts and corn on the cob, a side salad and sauteed veggies (onions, sugar peas, cauliflower, broccoli, carrots, squash, and zucchini w/ soy sauce). Fat free sherbet for dessert.

We are actually having a repeat of last nights dinner because I enjoyed it so much. Grilled chicken Caesar salad, but without the Caesar dressing. (I prefer honey mustard, DH prefers Italian.)

Blue Bell's Dutch Chocolate ice cream for dessert. (Not exactly in the diet plan, but hey, it's summer and it's HOT outside!)

Well I was thinking about having leftovers but I'm not sure now.....might make some grilled boneless skinless chicken breast marinated in italian dressing w/baked potatoes and salad(for me) and toast. I was sad for about a week....my grill was out of gas, but I just picked up a new bottle today. YAY!!!! I don't have to heat up my house to have supper....its already hot outside lol. Going to make another 5-layer pie today..not exactly on the diet plan but I use 1% milk in the chocolate pudding and this time im using the lower fat cream cheese and cool whip...but it still have a butter crust and powered suage...but as said before ITS HOT OUTSIDE!!!

I think I've made an actual dinner maybe five times in the 8 years Dh and I have been together. Tonight, he made himself a chicken salad before I got home from work. I just had an apple, a rice cake, and a bowl of edamane.

I made sandwiches on french bread.....dh has been telling me that my sandwiches are tastier than the ones from the subshops around here.

But I do buy the good Boars Head meat! I saw this thread earlier and meant to take a pic, but I forgot! We will be having them again tomorrow, so I'll try and post a pic.
