I just started a big pot of Stuffed Peppers for dinner tonight and I'm so excited!!! I haven't made stuffed peppers in such a long time and I can't wait for dinner!!!

What's on the menu for you guys tonight???

Dh is out of town until Sat night. I haven't decided what I'm eating tonight. I may do wheat free pancakes. I love breakfast food, but never eat it for dinner. I made a bit pot of pasta sauce on Sunday from fresh tomatoes that we strained. If I don't feel like cooking, I'll have some of that with brown rice pasta.

Oh YUM!! I love stuffed peppers (well, just the meat inside- not the pepper )! We have to run to a funeral as soon as I get home from work, so we're just having leftover Arby's Melts.... (YUMM)

Our TTC journey: 6 cycles Clomid, lap surgery/ D&C, IUI, 2 x IVF; 33 cycles- BFN.
IVF#1 (March 2010) Transferred two 8-cell grade A (perfect) embies- BFN and heartbroken.

IVF#2/FET#1 (Jan/Feb 2011):Transferred two (7&8 cell) grade A (PERFECT) embies- BFN again.
March 2011- February 2012: On BCP due to endometriosis.

March 2012- taking a few months off of BCP and we are TTC naturally.
We will re-evaluate another IVF w/FET try in 2013.

Oh, I love having breakfast for dinner! I should really do that more often! And nothing beats homemade sauce from fresh tomatoes!!! Yum!!! Can I come over and have some???

I used to hate the pepper part when I was younger, but now I like it! I don't know why since I ate peppers raw all the time! I love Arby's every once in a while. I'd rather eat that than other fast food places!

OH jeez good question...I think I am going to make homemade individual pizzas for dinner. DH is working all night, and we are leaving tomorrow for MT so Im not going to cook anything to big.....I have never had stuffed peppers though? What are they?

Mmmmm, can I come to your house Cris. I love stuffed peppers, but my husband doesn't (green peppers give him indigestion). Maybe I will make them anyways next week. Yum.

I don't know what we are having - I think we need to do something with our eggs since we are going out of town this weekend.....

Never had stuffed peppers??? You poor thing! LOL... jk. There are different ways to make them, but I make them the way my Grandma made hers and I personally think they are the best ever! I make almost like a meatloaf mixture (lean ground beef, egg, breadcrumb, seasonings etc). Then I cut the tops of the peppers off to make a "pepper bowl" and stuff them with the meat mixture. Put them in a big pot and cover them with tomato sauce. We usually serve ours over rice, but sometimes over angel hair pasta. Some people put different things in their stuffing like rice, or cheese, or whatever they like. My house smells insanely good right now with them bubbling away on the stove!!!

I've done it in the crock pot before too, but I was too lazy to drag it out of the closet! LOL.. My MIL bakes hers though. I should try that one time! Thanks for the reminder! The way I figure, anyway you can get those yummy things cooked works out well!!! LOL!
