Good recipes! I need some healthy recipes that are still yummy! I have a hard time with diets, but I really need to start watching what I eat and exercising! I have kinda let my weight get out of control since high school and I DO NOT LIKE IT!! UGH!

So what do you have that is yummy but healthy?

Hmmmm....

Cucumber salad - it is a vinegar salad with cucumbers, onions, and dill. I will post the recipie if you are interested. It is pretty good and kind refreshing.

Salads in general.
grilled chicken is always good.

We make chef salad for dinner sometimes - sandwich meat (diced), hard boiled eggs, cheese, lots of veggies, and fav salad dressing.

I'll have to think on this and check out my recipes... Most of them are Grandma's Good Old Home Cooked Italian though, so not really the best for watching what you eat! LOL

I make a steak salad:

Season the steak and put on the grill.

Get fresh greenbeans and put in a steam bag in the microwave for about 2 minutes, then put in a skillet to brown.

Add:

bag of salad greens (I like to add fresh spinach leaves too)
About a handful of cherry tomatoes cut in half
A few slices of onion
Romano cheese and/or feta cheese
black olives

Mix the salad stuff with italian dressing.

Slice the steak thinly and place the steak and greenbeans over the salad.

Thanks ladies! I will check out some salad recipees. The only thing is I am not a huge fan of most salad dressings. Anyone know a good one that tastes good to?

I use Girard's Old Venice Italian. It is really light and thinned out. I do not like thick, clumpy dressings. You can put just a small amount on the salad and it will coat extremely well.

Girard's is in a triangle shaped glass bottle with a gold foil top. We've also tried Girard's blue cheese vinegarette and it was really good too, but dh likes the italian!
