I took our my good old standby of boneless chicken breasts for dinner... and even though I just went to the grocery store yesterday, I have no clue what to do with them. Apparently, I make chicken too often and I need to change it up. I usually just marinade it and cook it, or make Chicken cacciatore or cutlets, but I need a new idea for tonight... any suggestions?

I have a great recipe for buffalo grilled chicken breasts. I am not sure if you like that kind of food, but I can get you the recipe.

Yum, I love buffalo-style/flavored anything! LOL- Unfortunately DH can't eat spicy stuff, but I'd love the recipe for when he's not around if you don't mind sharing!

Ooh post it later Ash! We always take out boneless chicken breast too and it does get boring after a while! (It's actually what I have thawing now and I have no idea what I'll do tonight) Thankfully my DH likes things even spicier than I do!

Hmmm, I usually make Chicken Alfredo - it is basically spaghetti that I don't have to worry about for AJ - LOL.

Sometimes I just grill it up on our George Foreman and either make chicken sandwiches or just grilled chicken. All I do is salt and pepper (and maybe some garlic powder) each side.

Something else you could do is stir fry, fajitas, or fried chicken. I had a craving a couple weeks ago and did some pan fried chicken - just cut my breast into strips.

I have an amazing recipe for Bourbon chicken!!! It's pretty easy and taste delicious!!

Yum... now I'm excited to try and see all these new recipes! Thanks for sharing them! It's always good to have some new ideas to try!

I ended up marinating it in Italian Dressing and a little bit of pecorino cheese and it's baking in the oven. I made a huge salad, so we can cut up the chicken over the salad. It's a little different than my norm I guess!

Chicken Parmesean (I was just thinking today that I might make it this weekend because it's been a while).

Just bread the chicken using bread crumbs & parmesan. Put in a pan and cover with spaghetti sauce. Sprinkle with more parmesan & some mozzarella and bake (might want to cover it with foil for the first part of the baking so the cheese doesn't burn then uncover for the last 10 min or so).

I do not do the jicama and watermelon salad, and I have also done this with boneless/skinless chicken breast as well as the french cut chicken breasts. It is so yummy!!

Oh wow Ash- that sounds amazing! I'm definitely going to have to try that! I'll just make DH some plain broiled chicken! LOL Thanks for sharing!

Christine- that's too funny about the pizza! I would have totally done that, but we're having pizza tomorrow.

Thanks for all the ideas! I definitely plan on trying out some of them soon!
