I'm so stumped with what to make for dinner lately... It's getting to be cooler which means fall/winter foods which is awesome, but I feel like I always make the same things...

So, "fork" over some good ideas ladies! Recipes too if you want to share!

Oh, this is my jam.

I love to try new recipes and stuff. Let's see...this week I made a pesto pasta with garlic shrimp, lemon pepper salmon with couscous and roasted broccoli, a mediterranean pizza, a cheesy broccoli rice bake, and a corn crab chowder.
We eat a lot of seafood because Husbear is a vegetarian (well..he obviously eats fish, haha).
All of those meals are SUPER easy and quick! We also do a lot of casseroles, stir-fries, and mexican food. Let me know if you want any of those recipes!

Today I'm making ribs in the crockpot all it is is brown sugar, coke a cola, bbq sauce, salt and pepper and you let them cook for 8 hours on low. We have been married a year and I just busted out my crockpot for the first time last week hehe. I also found this italian sausage recipe online with green pepper, onion, tomato in a tomato cream sauce....I made it with bow tie pasta.....we loved it and have made it twice in the last 2 weeks!

1. broccoli rice bake, from betty crocker

ingredients:
1.5 lb broccoli, cut into bite size pieces
2 c. uncooked instant brown rice
1 can veggie or chicken broth (we use veggie)
1 can condensed cream of broccoli soup
1 jar diced pimientos, drained (i don't add these)
1/4 tsp pepper
2 tbsp firm butter or margarine
1/2 original bisquick mix

Directions:
Heat oven to 425. In 2 qt saucepan, heat 1 inch water to boiling. Add broccoli, return to boiling. Reduce heat to medium, cover and cook until crisp-tender, about 5 min.
In ungreased casserole dish, mix broccoli, rice, broth, soup, pimientos, and pepper.
Cover, bake 20 min. Meanwhile, in medium bowl, cut butter into bisquick until crumbly.
Sprinkle over broccoli mixture, bake uncovered 8-10 min or until top if golden brown.

We like to sprinkle grated cheddar on it before we eat it, or i bet you could cut it into the bisquick mixture. Seriously SO TASTY!

2. pesto shrimp dish-

1 box bowtie pasta
1 packet pesto sauce mix
3/4 c water
1/4 c olive oil
1 bag frozen pre-cooked shrimp
1 tbsp butter + splash of olive oil
2 cloves garlic, chopped
black pepper

i don't really have a recipe for this, but it's super easy. i thaw a bag of frozen shrimp by running them under cold water for a bit.
while they're thawing, i boil water for pasta. while THAT'S heating up, I make the pesto sauce according to the directions on the packet- usually it entails whisking together the mix, water, and oil in a saucepan, heating until boiling, then reducing to a simmer for at least 5 minutes.
melt the butter and splash of olive oil in the skillet, then slightly brown the garlic. Add the shrimp and toss for a bit until they're heated and absorb the buttery garlic flavor. They're pre-cooked, so it won't take long.
Cook the pasta, toss with the pesto sauce. Serve with a pile of yummy garlic shrimp right on top.
This is my FAVORITE MEAL we make! I make it at least once a week, haha.

In the fall I do a lot of chili, baked stuff in the oven, etc. I try to avoid the oven all summer because it heats up the house so much.

Although, fall is really spring around here. I have a few things I could share.

One is ground beef (or turkey) browned and drained. Then you add a bag of macaroni and a can of V8 juice and bring it to a boil and then simmer till noodles are done and V8 is absorbed. Take it off the heat and add in some sour cream (approx 8 oz or so). We call it Sava Slop, but you could call it whatever you want.
