Funny you should ask this. I don't like to cook much but now that the days are shorter and cold I am picking up new hobbies around the house. I am into cooking new dishes this week and tried one tonight ( a mexican style dish) and it took so long to make (much longer than the directions said) that I vowed never to make that one again unless it was on a weekend!

I do have a recipe but I will have to dig it out tomorrow after work and post it.

I combine a can of black beans with some salsa, add some leftover chicken beef or fish and roll it in burritos. Add a side salad and dinner is done. If there's nothing leftover you can put in canned chicken. It's very yummy if you like southwestern/mexican style food.

I live for my slow cooker - especially in the colder months. I put a stew together in the morning before I leave, set on low....and BAM! it's ready to eat when I get home!

tuna patties, all you need is oatmeal, canned tuna and eggs. mix together and form patties, fry in some oil or butter. pop open a can of peas and you have a healthy and easy dinner

Corn Souffle

1 can whole kernal corn (drained)
1 can cream style corn
1 box Jiffy corn bread mix
1 cup sour cream
1 stick melted butter
2 eggs slightly beaten
2 tsp. sugar

Mix together. Pour into greased casserole dish. Sprinkle with salt. Bake at 350 for 1 hour

Pizza Casserole
(This recipe serves 12 so you may want to half everything)

2 lbs browned hamburger
3/4 pkg. cooked noodles
1 can cream of mushroom soup
2 cans pizza sauce
1 pkg. mozzarella grated cheese

Combine all ingredients. Bake at 350 for 30 minutes. Top with more cheese and bake 10 min longer.
You can all add your own variations/ingredients. This can be done in the crock pot and be ready for you when you get home from work.

2 medium chicken breasts (i put 3 or 4 cuz we have 6 people here)
12 oz noodles
family size can cream of chicken soup
velveeta cheese
1 cup milk
(bread crumbs or potato chips if you want a crunchy topping, i dont)

prepare chicken (you can bake or cook on stovetop in some water and seasonings) and cut into cubes

boil noodles

when noodles are ready...add soup from can (do not add water) and the milk

add the chicken and stir it

layer mix in casserole dish....then some velveeta cheese...then the noodle/chicken mixture...then more cheese...then sprinkle the bread crumbs on top...

i cook at 350 degrees for 20-25 minutes...serve with some garlic bread or the garlic cheddar biscuits (that only take about 15 minutes total to make!!!)
