Peppermint Pattie Fudge Bars
Ingredients:
1-1/2 cups vanilla wafer crumbs(about 45 cookies)
1/2 cup HERSHEY'S SPECIAL DARK Cocoa, divided
1/2 cup powdered sugar
1/4 cup (1/2 stick) butter or margarine, melted
1 can (14 oz.) sweetened condensed milk(not evaporated milk)
1/4 cup all-purpose flour
1 egg
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1-1/3 cups (8-oz. pkg.) YORK Mini Peppermint Patties, divided
Additional powdered sugar
Directions:
1. Heat oven to 350°F. Stir together cookie crumbs, 1/4 cup cocoa, 1/2 cup powdered sugar and melted butter. Press firmly on bottom of ungreased 13x9x2-inch baking pan.

2. Beat sweetened condensed milk, flour, remaining 1/4 cup cocoa, egg, vanilla and baking powder in large bowl until well blended. Spread evenly over prepared crust. Set aside 2 tablespoons peppermint pattie pieces; sprinkle remaining pieces over filling.

3. Bake 18 to 23 minutes or until set. Cool completely in pan on wire rack. Sprinkle cooled bars with additional powdered sugar.

4. Place reserved peppermint patties in small microwave-safe bowl. Microwave at HIGH (100%) 30 seconds; stir. If necessary, microwave an additional 10 seconds at a time, stirring after each heating, until patties are melted and smooth when stirred. Drizzle over bars. Allow drizzle to set. Cut into bars. 36 bars

Chocolate Peanut Butter Chip Fudge
Ingredients:
2 cups (12-oz. pkg.) HERSHEY'S Semi-Sweet Chocolate Chips
1 can (14 oz.) sweetened condensed milk (not evaporated milk)
1 teaspoon vanilla extract
Dash salt
1 cup REESE'S Peanut Butter Chips
Directions:
1. Line 8-inch square pan with foil.

2. Combine chocolate chips, sweetened condensed milk, vanilla and salt in heavy saucepan. Cook over low heat, stirring constantly, until chips are melted and mixture is smooth. Remove from heat. Add peanut butter chips; stir quickly just to distribute chips throughout mixture. Spread evenly into prepared pan.

3. Refrigerate 2 hours or until firm. Remove from pan; peel off foil. Cut into squares. Store tightly covered in refrigerator. 3 dozen pieces or about 2 pounds.

NOTE: For best results, do not double this recipe

Rich Cocoa Fudge
Ingredients:
3 cups sugar
2/3 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
1/8 teaspoon salt
1-1/2 cups milk
1/4 cup (1/2 stick) butter
1 teaspoon vanilla extract
Directions:
1. Line 8-or 9-inch square pan with foil, extending foil over edges of pan. Butter foil.

2. Mix sugar, cocoa and salt in heavy 4-quart saucepan; stir in milk. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil. Boil, without stirring, until mixture reaches 234°F on candy thermometer or until small amount of mixture dropped into very cold water, forms a soft ball which flattens when removed from water. (Bulb of candy thermometer should not rest on bottom of saucepan.)

3. Remove from heat. Add butter and vanilla. DO NOT STIR. Cool at room temperature to 110°F (lukewarm). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss. Quickly spread into prepared pan; cool completely. Cut into squares. Store in tightly covered container at room temperature. About 36 pieces or 1-3/4 pounds.

NOTE: For best results, do not double this recipe.

VARIATIONS:
