I love these things and they really work for me! I eat 1/4 of the pan on days I want to boost(replace your breakfast and any snacks with these so you don't pack on pounds!).
First choose your filling and prepare it if necessary.
Then,
Mix together:
1 cup flour
1 cup old fashioned oats
2/3 cup brown sugar(I don't pack it)
1/4 tsp. baking soda
Then use a pastry blender to cut in 1 stick of butter(1/2 cup)until butter is the size of small peas.
Press all but 1/2 cup of mixture into a 9X9 inch square baking dish. I use a glass Pyrex.
Apple Filling:
Cook 2 peeled and chopped apples, 2 TB water, 1 TB lemon juice and 1/2 tsp cinnamon on low in saucepan for 10 minutes.
Raisin Filling:
In saucepan mix 1/2 cup water, 2TB sugar & 2 tsp cornstarch. Add 1 cup raisins. Cook on medium high until thickened.
Jam filling:
Reduce sugar in recipe to 1/2 cup. Use 1 cup of jam or preserves for filling. I love apricot preserves! This makes a more crumbly bar.
Spread filling over pressed bars. Sprinkle reserved 1/2 cup of crumbs on top of filling. Bake at 350* for 30-35 minutes. Cool completely before cutting.
Hmm, do the 1-minute oats work? Because I bought a 9 lb box at Sam's -- I love those!! (Actually, I'm already halfway through the 9 lbs, so just 4.5 left.) DH was astonished, but I actually bought it maybe 3 months ago. A little bit before I delivered Roan. I don't think that's terrible. I LIKE oatmeal. (Finn and I both had oatmeal for breakfast this morning And Finn does quite well feeding it to himself for a 2-yr old.)
